Jessica Day 10: Imbalanced Grump

I’m SO glad that we’re all doing this together. Makes it easier knowing that we’re going through similar physical and emotional changes. And I’m with Cerizo! Balance is an issue right now. I’m spending a lot of time in the kitchen, at the grocery store and online for recipes and other paleo-related material (I love this part).  Hoping that once this all becomes habit, it’ll get easier. I was also SUPER GRUMPY today. Kept on snapping at everyone. Hahaha. Good thing Adam was cool about it and just cooperated.

  • Breakfast: Green Tea, Zucchini cake, 2 slices Turkey bacon = SALT overload
  • AM Snack: Date, Kale Chips (see process below), 4 Frozen Grapes
  • Lunch: Grilled Chicken w/ tomato, cilantro, onion, lemon juice mix
  • PM Snack: Coconut Something Lara Bar, Kale Chips (see below)
  • Dinner: 5 oz steak, fresh guacamole, Tummy Tamer Herbal Tea (Celestial Seasonings)

Clean, dry and remove stem from Kale.

One of my favs in the kitchen–the Misto. Sprays Olive Oil evenly.

Add lemon juice and salt.

You’ll need to use your hands to ensure each “chip” is evenly coated.
Then, lay flat and bake in the oven @300degrees for 12 minutes, check/turn, then maybe another 8 minutes.
DO NOT BURN THEM.
Be sure to store them in an airtight container so the moisture doesn’t compromise it’s salty/crispy goodness=)
FYI, I used my dehydrator and wasn’t all that impressed. I prefer the baking method for these.
